Sesame Ramen Salad
This Sesame Ramen Salad is a quick, easy lunch that combines snow peas, carrots, lime, peanuts, green onions and ramen noodles to create a flavorful, zesty salad! Ingredients

2 packages (3 ounces each) shrimp ramen noodles

6 cups hot water

3/4 cup sliced green onions (about 8 medium), divided

1/4 cup chopped fresh cilantro

1/2 teaspoon grated lime zest*

2 tablespoons lime juice*
*use 1 lime for both juice and zest

2 cups fresh snow peas, devein and halved diagonally (about 8 ounces)

1 cup julienned carrots (shredded can also be used)

4 tablespoons chopped dry roasted peanuts, divided
Directions
Step 1. Break ramen noodles into quarters and place in a large bowl; reserve one seasoning packet. Cover noodles with hot water; let stand until softened, about 5 minutes.
Step 2. Drain noodles; rinse with cold water. Drain well and return to bowl.
Step 3. Mix salad dressing, 1/2 cup green onions, cilantro, lime zest, lime juice and contents of reserved seasoning packet; add to noodles. Toss with snow peas, carrots and 3 tablespoons peanuts. Sprinkle with the remaining green onions and peanuts.
