Gnocchi with Peas and Bacon

Ingredients
- 1 – 16oz pack gnocchi
- 4oz bacon, small diced
- 1 shallot chopped
- Salt and pepper to taste
- ¼ cup water
- 1 teaspoon chicken base
- ½ cup frozen peas, thawed
- 3 Tablespoons sour cream
- 2 Tablespoons grated parmesan
Directions
Step 1.Cook the gnocchi following the pack instructions for cooking in a skillet. (6-8 minutes on medium high heat, with 3 Tbsp of butter). Remove from the pan, and set aside when done.
Step 2. In the same skillet, fry the bacon until crisp and golden, but don’t let it color too much.
Step 3. Add the shallot and cook for a few minutes, then add the chicken stock(water and base), peas and sour cream and simmer for another minute.
Step 4. Add in the gnocchi and parmesan and stir everything together.
Step 5. Sprinkle with more parmesan if desired. Serve.
