Ingredients

Cajun Seasoning

  • 1 1/2 Tablespoons smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon black pepper
  • 1/2 teaspoon cayenne pepper
  • Salt to taste

Chicken and Rice

  • 2 Tablespoons olive oil, divided
  • 1 pound boneless skinless chicken breasts, cut into bite sized pieces
  • 1 Tablespoon cajun seasoning
  • 1 medium yellow onion, diced
  • 1 bell pepper (color of your choice!), diced
  • 1/2 teaspoon garlic, minced
  • 1 Tablespoon cajun seasoning
  • 1 cup uncooked Jasmine rice, or long grain white rice
  • 2 cups water
  • 1 Tbsp chicken base
  • scallions for topping, optional

Directions

Step 1. Combine all of the ingredients for the cajun seasoning in a small bowl.

Step 2. Toss the cubed chicken in a tablespoon of the Cajun seasoning

Step 3. Add a tablespoon of olive oil to a large pan over medium-high heat. Add the chicken to the pan and brown for 4-6 minutes. Remove the chicken from the pan and set aside.

Step 4. Add the remaining tablespoon of olive oil to the pan. Add in the garlic, onion, pepper and a tablespoon of the Cajun seasoning and sauté until soft, about 4 minutes.

Step 5. Stir in the rice and then pour in the chicken base and water(broth). Bring it to a simmer. Cover with a lid and cook on low heat for 15 minutes. Turn off the heat, add the chicken, and let it steam for another 5 minutes to absorb any excess liquid. Top with sliced scallions (optional) and enjoy!
