Smoked Salmon Crostini
Light and scrumptious, this Smoked Salmon Crostini is an affordable, elevated lunchtime snack!

Ingredients

6 oz Smoked Salmon (pouch)

1 Avocado, diced
-
½ Medium Red Onion, diced

2 Tablespoons Lime Juice
-
Salt and Pepper to taste

2 Tablespoons Fresh Dill, chopped

1 Baguette
-
¼ cup Olive Oil – to brush on Crostini’s
Directions
Step 1. Slice baguette into ½ inch slices. Brush with olive oil. Bake at 400 for 10 to 12 minutes on a baking sheet, being sure to not overcook. Remove from baking sheet and set aside.
Step 2. Remove flesh from avocado. Carefully dice into small pieces. Add your diced red onion, lime juice, smoked salmon, salt, pepper and dill. Gently fold ingredients together, being careful not to smash the avocado.
Step 3. Spoon appoximately 1 Tablespoon of mix on top of each crostini.
Additional Notes: This recipe makes up to a dozen crostini!
